So what is Kombucha?

Quite simply, it is a fermented sweet tea. The fermentation process begins with the introduction of a SCOBY (Symbiotic Culture of Bacteria and Yeast). The SCOBY feeds on the sugar and the caffeine in the brew so there remains very little of either in the finished product and so makes a delicious tangy/sour beverage which is an excellent alternative to sugar and caffeine laden drinks.

Kombucha is perfect for anyone who wants to look after their well-being by reducing their intake of sugar and caffeine. Kombucha contains no additives or preservatives or any chemical nasties and it is also suitable for Vegetarians, Vegans and people who are gluten or dairy intolerant. It is low in sugar and calories (typically just 45-50 calories per bottle) making it a healthy choice for people who care what they are consuming. Due to the brewing process, Kombucha does contain a low level of alcohol but this is typically below 0.5% abv & so is classed as a soft drink.

The History

The origins of Kombucha go back to 221 BC and was first brewed in Northern China and Russia (known as tea kvass). Kombucha has been known to have a highly beneficial effect on fighting degenerative diseases such as arthritis, irritable bowel syndrome, acid reflux and even cancer.

Whilst we are not promoting Kombucha as a ‘cure’ for anything, there is lots of anecdotal evidence that it will certainly improve many health conditions. Over recent decades, the food and drinks that we consume have been pumped with additives, preservatives, chemical stabilisers and anti-biotics. We believe that these additives which have been used to increase shelf life, have had a profound effect on our microbiome – did you ever hear of Irritable bowel syndrome 20 years ago?
